Mine is similar, but 1 is an internal drive, and I have almost no cloud storage.

Do you at least have a script for backing up the live copy to onsite? Like plug in the drive, enter encryption key, then run script?

Yes, a script grabbing the paths specified in backup configuration file and calculating the checksums of created archives. No additional encryption at this point as the external drives are LUKS encrypted. The setup works seamlessly only with Linux machines though.
