What are oneNote alternatives that dont require cloud or signing in?

So, I really like OneNote at work. It is easy to organize different things and takes notes or plan stuff with.

I want to use it on my personal computer. HOWEVER, I am not a fan of using anything cloud related from my personal computer to Microsoft. Sorry, its just a personal thing. I don't want anything backed up on something I have no control over. That is what external hard drives are for (at least with personal computers).

So, given that, what are my options?

I've tried looking into ways to using OneNote without signing in, but doesn't seem like that is an option.

I have also searched for alternatives, but not really seeing any.

Anyone have any recommendations?

Mainly looking for a tool that is quick to access like OneNote, that doesn't require signing in or using some cloud service, and overall is just great and easy to organize stuff like OneNote.

Does anyone have suggestions?

The way I use it it's relatively simple, I tend to forget a lot so I leave notes, documentation, references, know hows and pretty much everything I judge that I will need in the future and will definitely forget.

In order to sync it with my other computers, I use another tool (Nextcloud), hosted on my homelab. I know it requires signing in but, think about it, it comes with clients for linux, windows and mac and phone (but I haven't tried zettlr for phone, not even sure they have it). With this you will get the best of both worlds: cloud and local.

Unfortunately, assuming you're using it for the pen, there are no good alternatives. I wish there were! I tried a few on linux, but they were all janky and laggy.
