Sadly, it looks like a significant amount of the cheese in cold storage is American and Swiss [1] – they missed a fantastic opportunity to age cheddar en masse.
I lived off the stuff for several years (along with the free dried milk and stale bread and mayo sandwiches). The worst part about it was all the mold you’d have to cut off. At the time, I didn’t know anything about taste. But, hey at least it kept me from starving.
This article uses “billions” incredibly loosely. First of all, I wouldn’t call 1.5B “billions”. Second, 1.5B pounds is almost certainly under 1B wheels.
