It appears that sourdough is relatively healthy:
https://pubmed.ncbi.nlm.nih.gov/18317680/I found that sourdough from local restaurant did not raised blood glucose level significantly (well below the threshold of high blood glucose), looked for a research and voila! here's one. There are others, also showing benefits of sourdough compared to yeast leavened bread.
Also, making sourdough at home is easy and fun. ;)
