I'm working on a startup, and I find myself needing a technical mentor in the long run.
How would this play out? Is this like going to a CS Professor's office hours?

I'm based in the U.S., and my cofounder is abroad. We're establishing the parent company in the U.S. I want to know what experience any of you had with these services.
There isn't an 'undo' button in the legal world, so one screw-up could cost thousands of dollars minimum.
What services can help me achieve this?
My main concern with switching: Quality Assurance issues and reliability. Do you see this as an issue for those who have experienced both Apple and Samsung relatively recently?
I've been using markdown notes for a short while, but some shortcomings, such as a lack of collapsible points and styling, make me want to (re)consider other notetaking solutions.
